Plucked from the overflow section of the book Cocktail Codex and created by Devon Tarby in 2016, the Endless Summer is an intriguing original that packs impressive summer potential. With loads of grapefruit jammed into each part of the sip, this drink will ultimately be divided between those who love the bitter citrus and those who don’t. Given the name, one might expect this drink to be sweet, but it is actually quite dry, citrusy, and floral with whiffs of pineapple and tequila. Any sweetness that does exist is provided primarily by the pineapple juice and curacao, making this a drink powered by fruit sweeteners more than cane sugar. That same fruit power also makes this recipe a perfect choice for daytime drinking, brunch, rooftop parties, or any summer celebration.

The endless summer will remind some of other grapefruity drinks like the brown derby, blinker, or 212. While it does share some elements with those recipes, the interplay between bitter grapefruit and sweet pineapple sets this one apart. Employ a generous peel for additional flavor and an awesome looking garnish. Pink grapefruit looks particularly fabulous. A dash of soda can amp up the summer vibes and add a touch of refreshing sparkle, but isn’t required. The drink is pretty sour, so if that isn’t your vibe, you could add a bit of extra sweetener. A sweeter orange liqueur will result in a more balanced drink, while a drier curacao will make for a more sour, fruity experience. We used Giffard creme de pamplemousse rose and liked the results, though several other interesting options are available. Blanco tequila is requested in this drink but we have also tried reposado tequila and liked it.
